Enjoy this market fresh meal for breakfast lunch or dinner! Goat Cheese + Caramelized Onion Frittata Served with Lemony Salad and Fresh Bread
2 Large Onions
4 tsp Honey
8 Large Eggs
1 Cup Goat Cheese
Bundle of Leafy Greens (pick your favorite or try something new)
Bundle of Beet Root

Put the oil and onions, thinly sliced, in a medium-to-large non-stick, oven safe, frying pan and sweat on a low-medium heat with the lid on for about 10 mins, or until they begin to soften and brown a little at the edges. Reduce heat to low, add the honey, stir well, then leave to bubble for 1 min. Meanwhile, crack the eggs into a bowl and beat with a fork, then add some black pepper. Heat oven to 350F
Pour the eggs into the pan and cook for 5-6mins until almost set. Break the goat’s cheese into large chunks and dot over the top. Place the frittata in the oven and bake for about 30-35 minutes or until knife comes out clean.
Mix the salad leaves and beetroot (cooked and sliced) in a large bowl. Dress with the lemon juice and toss.
Enjoy frittata warm fresh from the oven or chilled in the fridge the next day. Serve with leafy green salad and fresh bread.
